4 small boneless skinless chicken breasts cooked and shredded (I boiled mine for an hour with some onion, carrot, celery, and bouquet garni herbs I had: rosemary, basil, parsley, thyme, tarragon)
2 tender celery stalks chopped finely
2 stalks green onion chopped finely
1/2 cup light mayonnaise
1 tablespoon dijon mustard
1 tablespoon stone ground whole grain mustard
salt and pepper to taste
Trying to think of good brain food to feed my fiancé this week. He takes the bar exam next week!


Sounds good, but I was expecting shrimp and grits.

ReplyDeleteI like the mustard component to this. I'll file this one away for the next time I have some extra leftover smoked chicken, I think it would work great in this dish.
